Ingredients:

1 lb ground yak meat
1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
1 green bell pepper, chopped
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) diced tomatoes
2 tbsp tomato paste
1 tbsp chili powder
1 tsp cumin
1/2 tsp smoked paprika
1/4 tsp cayenne pepper (optional for extra heat)
Salt and pepper to taste
Fresh cilantro, shredded cheese, and sour cream for garnish
Instructions:

In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and bell pepper, and sauté until the vegetables are softened, about 5 minutes.
Add the ground yak meat to the pot and cook until browned, breaking it up with a spoon as it cooks.
Stir in the chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and pepper. Cook for an additional 2-3 minutes to allow the spices to become fragrant.
Add the diced tomatoes, tomato paste, kidney beans, and black beans to the pot. Stir to combine, then bring the mixture to a simmer.
Cover the pot and let the chili simmer for 30-45 minutes, stirring occasionally to prevent sticking.
Taste and adjust seasonings as needed. Serve hot, garnished with fresh cilantro, shredded cheese, and sour cream.
