These fresh and light spring rolls are filled with tender yak ribeye, crunchy vegetables, and fresh herbs. They are served with a delicious dipping sauce for a refreshing appetizer. Perfect for a light start to any meal.

Ingredients:

  • 1 Yak Ribeye Steak, thinly sliced
  • Rice paper wrappers
  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumber
  • Fresh mint leaves
  • Fresh basil leaves
  • 1/4 cup hoisin sauce
  • 1 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp lime juice

Instructions:

  1. Sear the yak ribeye slices in a hot skillet until cooked to your liking. Let cool.
  2. Soak rice paper wrappers in warm water until soft.
  3. Fill each wrapper with ribeye, carrots, cucumber, mint, and basil, then roll tightly.
  4. In a bowl, mix hoisin sauce, peanut butter, soy sauce, and lime juice to make the dipping sauce.
  5. Serve spring rolls with the dipping sauce.
